He is a tight end who was a USA Today First-Team All-American at Wayne Hills High School. Olsen played his college football at the University of Miami where he was a part of the rap group 7th Floor Crew.

He was drafted #31 by the Chicago Bears in the 2007 NFL Draft. Olsen played for the Chicago Bears from 2007 to 2010 and has played for the Carolina Panthers since 2011. In 2007 he was a PFW/PFWA All-Rookie Team selection and won the Brian Piccolo Award. Olsen was selected to the USA Today All-Joe Team in 2012 and 2013.
